Bad requirements.txt in examples

### Reproduction

Clone github repository 
Create new python env with python==3.10
Install requirements.txt with pip
pip install transformers scipy sklearn

Try running nlp_example.py

### Expected behavior

The current requirements.txt does not work with numpy>=2.x because of the old datasets version. I got the example running on my machine with

```
evaluate==0.4.3
datasets==3.6.0
```
